Scriptwriters will painstakingly create columns showing what appears on the screen, what the text says and when it appears, what each button does, and so forth, forcing the SME to puzzle through a complex and almost always redundant document. Your SME has seen your prototype, so they know how the activities are supposed to work. Instead of describing the functions of the activity in painful detail over and over again, rely on the prototype to make it clear. That lets you create a simple text document for your activity drafts, ideally using Word or a similar program that tracks changes. When I was designing a lot of custom elearning, a one-scene miniscenario could be formatted like the following (fictional!) example, in a simple text document.
